Located at the hilly area at the base of Volcan Santa Ana, Finca El Manzano has prized growing conditions. Finca El Manzano consists of Strictly High Grown (SHG) coffee cultivated at an altitude of 1,300 meters to 1,500 meters above sea level, which is some of the highest grown coffee of Central America. Coffee grown at high altitudes attracts traditional coffee purists who seek bold intense acidity and full body. The advantage of growing coffee at such a high altitude is that the colder climate encourages slower-maturing fruit. Slower maturation results in a bean that is denser, smaller and less permeable, packed with lively flavor and a gentle aroma. Finca El Manzano is ideally situated only about 100 meters below the tree line. If it were located at any higher of an altitude, the coffee would be harmed by the cold weather. Finca El Manzano consists of 90% Bourbon (very old genetically unaltered coffee), 8% Typica (original strain) and 2% other.
