Each cafeto (or coffee tree) is cared for by hand, from the time it is planted through it’s entire development. Some of the people that care for our cafetos include Ana Margarita Reyes, Angela Ala and Blanza Hernandez. The vast majority of our coffee is Bourbon. Bourbon is a botanical variety of the Coffea Arabica variety that first appeared on the island of Bourbon, now Réunion. Some of the best Latin-American coffees are from Bourbon and Typica stock. We grow the same bourbon coffee that is grown in Brazil, however Salvadoran bourbon is grown along hills covered with shade trees, which exposes the trees to less sunlight. These conditions create a sweater and more dense bean. Typica is a botanical variety of Coffea Arabica and is one of the oldest and most traditional of coffee varieties. Among our two plantations, we grow approximately 10% Typica. Experts widely concur that Old Arabicas like those grown on our plantations produce a finer cup
