As our trees grow we prune them about a foot from the ground. We keep our trees pruned to about 6 to 8 feet. This makes it easier to pick the beans and promotes heavy bearing. The Arabica plant has remained a stable strain due to the fact that it is self-pollinating. Our cafetos reach full maturity after about three to four years. After the rainy season, our hills whiten with blossoms. It is truly a spectacular event as it looks like it has just snowed in the tropics. The first bloom accounts for 80% of all of the flowers. A refreshing honey-like scent fills the entire estate when our plantations are in bloom.
