Processing

With a state of the art newly built processing mill located on the plantation we are able to quickly process the freshly cut cherries minimizing the time from the cutting of the beans to drying on the patios. This greatly minimizes many undesirable characters in the cup due to molding and fermentation of beans waiting to be processed. As all the water we use comes from the collection of rain water through out the year, we are very conscience of how we use every once of water. As a result we decided to use a relatively new processing method using Pinhalense demucilagenator which maximizes efficiency of water use.
